Microwave mug banana bread with chocolate chips


3 T nondairy milk
1/2 teaspoon vinegar

1 ripe to overripe banana
2 T brown sugar
1 T white sugar
1 T vegetable oil
1/4 tsp vanilla

2 small pinches (1/8 tsp) baking soda
2 pinches baking powder
3 T flour
1 pinch salt

small handful chocolate chips and/or chopped walnuts (optional)

In a bowl, mix milk and vinegar. Grease 1 or 2 mugs. In a separate bowl, mix baking soda, baking powder, flour and salt. Now go back to the bowl with the milk and add sugars, oil, vanilla, and mash the banana into all that until it's well mixed. Stir in dry ingredients. Stir in chocolate chips and/or nuts. Pour into 1 or 2 mugs.

For 2 mugs in a 1,000-watt microwave, microwave about 2 minutes. For 1 mug, microwave 3 minutes. After these times, check for doneness with a toothpick or fork, and continue cooking in 30-second intervals as needed.
